Holy Crap! I'm officially in love with you L'Oiseau Noir. No seriously! *Regains composure* Ahem... I mean, I totally second the recommendation for Fate/Stay Night.
Also Vampire Hunter D (it's rather vintage by now but, I feel it's a classic) and its sequel Vampire Hunter D: Bloodlust are rather good movies to watch when you do not have the time to devote to a series.
