What's so attractive about "cat" fights?

Perhaps, but just because one thing is more hot than another doesn't mean that other thing isn't hot at all. For instance, I prefer sex to head, but if circumstances somehow conspire such that I can't have the former, I'll settle for the later.

I would guess that men enjoy watching cat fights for the same reason women enjoy men fighting over them.

Ah, logic. But my guy friends say it's simply nice to see a chick get beat up once in a while. Which usually ends with me hitting the guy who said it and them giving me the lecture on how it's not fair that girls can hit guys but not the opposite. So the guys are just jealous . . . and they're hoping that a boob will show or that the girls will start kissing.

In answer to the original question, as a guy I don't find cat-fights "hot". I find people who throw their hands around like spiteful children when they hear something they don't like utterly abhorrent.
Having been over 6'' since the age of fifteen, I've experienced a lot of provocation, ranging from drunk guys with chips on their shoulders ("think you could take me?") to hysterical women ("oh, you're big enough to absorb a punch but I'm so tiny"). When I was young and manically idiotic I didn't mind so much, and sometimes even enjoyed kicking some ass. I look back now and cringe. As an adult (legally in September, but in behaviour for several years now, unlike people I know in their late twenties who still think the night's been wasted if they don't come home with bruised fists) I find myself with zero fucking tolerance for people who think throwing down is a valid way off settling anything other than who was born stronger. It's me, it's always me, now fuck off.
