A recipe for everyone, including those who don't cook

LEMON BREAST CHICKEN





Ingredients:
1 whole chicken (weight is dependent on how many servings are
required)
1 large lemon, cut into halves
sprig of rosemary
salt and pepper to taste
butter or olive oil, whichever you prefer

Heat oven to 350 degrees

Rub butter or oil over the skin of the chicken until it is completely
coated. Take a knife and gently separate the skin from the breast meat; slide
lemon halves under the skin with the peel side up. This way the juice from the lemon will coat the breast.

Season skin of chicken to your preference; place sprig of rosemary into
the chicken.

Cover and place in oven for 30-45 minutes. Remove cover and continue to
roast until juices run clear, basting every 15-20 minutes, depending on
size of the bird.

If you've followed these steps correctly, your chicken should look like
the one in the picture. Bon Appetit!

I like this recipe, but just...what the hell? Lol, what motivated you to post a chicken recipe? I have a huge smile on my face from this.

I don't know...maybe it was the fact that I like to cook...or maybe it has to do with the picutre.

I'm going to argue the title of this topic. It can't possibly be a "recipe for everyone", since some people don't eat chicken! Like myself, for instance.

Cherry Sorbet Recipe

2 C. simple syrup
Two 16-oz. cans pitted bing cherries in heavy syrup
1/4 C. fresh lemon juice
1/4 C. water

Drain the cherries, reserving 2 tablespoons of the syrup. Put the cherries through a food mill. Stir in cherry syrup, lemon juice and water.

Pour the mixture into the bowl of the machine and freeze.

Makes about 4 1/2 cups.

Simple Syrup
4 C. sugar
4 C. water

Place the water and sugar in a saucepan and simmer until the sugar is dissolved. Cool to room temperature, then refrigerate in a covered jar.

Makes about 1 quart.

OMG you're so silly! I cook alot of chicken so this recipe sounded yummy. I was all serious reading the recipe and taking mental notes. Then I saw that picture of the chicken with the boobies and I almost feel out of my chair laughing.

Peach Jam

4 cups chopped peaches
1 box fruit pectin
2 tablespoons fresh lemon juice
5 1/2 cups sugar
1/2 teaspoon ginger
1/2 teaspoon cinnamon

Clean jelly jars thoroughly. Place two-part lids in boiling water until ready to fill.

Select 3 pounds fresh peaches (not under ripe or over ripe). Loosen peels by dipping peaches in boiling water for 30 to 60 seconds. Pit and peel peaches and finely chop. Measure sugar, ginger and cinnamon, set aside.

Stir fruit pectin and fruit together in a saucepan. Bring mixture to boil using high heat, stirring constantly. Quickly add sugar. Bring to boil, stirring constantly. Boil for 1 minute. Remove from heat.

Immediately fill jars, leaving 1/8 inch head room at the top of the jar. Wipe jar rims and threads. Quickly cover with lid and band.

Using USDA guidelines for our elevation, place jars in a boiling water bath for 5 minutes. Remove and let stand for 24 hours. Remove bands and store in a cool place for up to 1 year.

Blueberry Muffins

1/4 c. sugar
1/4 c. honey
2 eggs
1 teaspoon vanilla
1/2 c. skim milk
1 c. blueberries
2 c. flour
2 teaspoons baking powder
3/4 teaspoon salt
1/2 c. butter

Beat together butter, sugar, and honey. Add the eggs to mixture. Stir in vanilla. Add flour, baking powder, salt, and milk. Then add blueberries.

Place in muffin tray. Bake at 350 degrees (farenheit) for 25-30 minutes. Cool in a tray for ten minutes and them remove muffins onto rack.

Makes 12 muffins.

A Poor Man's Italian Dish *I'm still trying to figure out a good name*

Regeants:

Boneless chicken breast diced into cubes
Choice of noodles (Fettuccine noodles work well)
Extra Virgin Olive Oil
Red Wine
Half a bulb of FRESH garlic
Fresh spinach
Fresh diced Mushrooms
Cherry tomatoes diced in halves
Diced red onions
shredded Mozzarella cheese

Seasonings:
Oregano
Thyme
Rosemary
Blue Poppy Seeds

Start the noodles in its own pot and let them finish to desired doneness.

Start another pot on high with a mix of red wine, olive oil, and the pieces of the garlic bulb. Be sure that those pieces are peeled clean. Wait for the mixture gets hot and sizzling then add the chicken and start applying all the spices. Go easy on the rosemary, it has a strong taste. Once the chicken is half cooked, add all the veggies (spinach, tomatoes, onions, and mushrooms).

Let cook, while adding a bit of oil and wine every now and then to keep it from sticking. Once the tomatoes and spinach become stringy, then add the cheese and noodles to the mixture and stir together. Add lots of cheese to evenly coat everything.

Take it off the burner and let cool a couple minutes and serve.

Directions

1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups all-purpose flour
1 cup semisweet chocolate chips

Preheat oven to 350 degrees F (175 degrees C).
Mix butter, eggs, vanilla and sugars together. Add dry ingredients and blend well, until mixture is whipped. Mix in chocolate chips.
Drop tablespoon sized pieces dough onto a greased cookie sheet; bake for 8-10 minutes, until edges are browned. Remove from oven before the center is browned.

A salmon dish. I have no name for it.

Ingredients:

Salmon fillets
DEL ALLO Dipping Spices. (It has 4 kinds of spice mixes in it)
If you can't find that then use:

Basil
Rosemary
Garlic
Very finely shredded mozzerella. It should be like a powder

Olive oil
Red wine
White onions
Lettuce

Get a big frying pan and coat the bottom with olive oil, red wine, diced white onions, and bits of shredded lettuce. The lettuce should be on top to form a kind of bed. Get that bad boy on high and wait for it to start sizzling and let it saute' the onions til they turn kind of brown and clear. Coat your salmon fillets heavily with the spices, but go easy on the rosemary. It's really strong.

Take the fillets and lay them on the sizzling bed on the pan. Let the salmon get about half cooked on the one side and flip the fillets over. Essentially, you're trying to get the veggies and bed to pretty much burn and scorch onto the salmon. The salmon is done when it's kinda white on each side and only slightly pink in the middle. The middle should also be hot/warm of course. Cold fish when it's unintentional is kinda gross.

Serve it. Serve it with some mixed veggies and a good wine. Very healthy and very tasty. I would reccomend having a side salad or cesar salad with it.

Salmon, Snap Peas and New Potatoes with Mustard Vinaigrette Recipe
Ingredients
For the mustard vinaigrette:
2 tablespoons Dijon mustard
1 tablespoon freshly squeezed lemon juice
2 tablespoons white wine vinegar
2 tablespoons extra virgin olive oil
2 tablespoons vegetable or chicken broth
2 tablespoons chopped shallots
2 tablespoons fresh chives
salt to taste
freshly ground black pepper

For the snap peas and potatoes:
3/4 pound sugar snap or snow peas
3/4 pound small, new potatoes, quartered

For the grilled salmon:
4 salmon fillets, about 4 to 6 ounces each
2 cups spring greens, such as watercress or arugula

Cooking Instructions
For the mustard vinaigrette:
1. In a small bowl, whisk together the mustard, lemon juice and vinegar.
2. Slowly whisk in the olive oil and vegetable broth. Stir in the shallots and chives. Season with salt and pepper.

For the snap peas and new potatoes:
1. Put the potatoes and peas in a large steamer. Set the steamer over simmering water and cook, covered, until the potatoes are tender, about 8 minutes.
2. While the vegetables are still hot, toss them with a few tablespoons of the mustard vinaigrette. Set aside at room temperature while you cook the salmon, or refrigerate for longer storage.

For the salmon:
1. Brush the salmon fillets with some of the mustard vinaigrette and generously season with salt and pepper.
2. Spray a grill grate with non-stick cooking spray and preheat the grill.
3. Place the salmon on the grill and cook for 3 to 4 minutes on each side. Thicker fillets may need to be finished in a 350°F oven for about 5 minutes.
4. To serve, divide the steamed peas, potatoes (these should be served at room temperature) and greens among 4 plates. Place a grilled fillet of salmon on each plate alongside the vegetables. Drizzle a little of the remaining vinaigrette on each plate.
