Shyness can be the biggest barricade with someone you like.. it happens when I try to befriend someone as well.
It's good that you suppressed your emotions so far - chances are he probably wasn't ready to commit back then, but now that you guys are on the brink of a possible relationship, it must be a bit overwhelming at first.
Touch his arm as you casually talk about things and the usual...( be yourself); if he likes you back, he will definitely feel the connection. Buy him a drink and be as intruiging/fun as you can... don't go OTT though.
He sounds like a great guy. Hope everything works out for you.
if you text him, go with short texts - guys hate long, ranting speeches {: but you probably knew that already

He's probably intimidated by the sheer cuteness that is Geo and thinking to himself, "Whoa, the hottest chick on campus keeps looking at me funny."
Why not take your camera somewhere you know he will be and start taking photos? Let him "accidentally" walk into your picture and you'll have a totally innocent looking motive to speak to him.

Better yet, innocently ask him if it's okay if you take his picture ... because you like his (shirt, pants, boots, look, whatever) ... and then you can let his responses guide your reaction and conversation ... sort of like sticking your toe in to see if the water is warm for swimming.

No because there isn't much to argue with evolution. If we couldn't digest meat at all, then no one would be able to eat it without being very very ill. Which is why human beings evolved to eat small amounts of meat. Quite easy to understand.
