Invest in a good Santoku knife. They have a razor thin blade, are easy to sharpen, and have great versatality. Wetting the blade to keep it clean is a great idea if you've forgotten to rinse the rice and soak it prior to cooking. Sushi rice is a natural sweet rice high in starch, and if not rinsed throughly will produce a slude of sticky starch. Cutting the rice with rice vinegar helps to keep the rice manageable and moldable, but if you failed to properly rinse it prior to cooking then wetting the blade and keeping it clean may, perhaps, be the only way to section the sushi into orderly chunks.
As for those little bamboo rolling sheets...pain in the fucking ass. Use plastic wrap if you have to use something.

So Tom, when you come over and making me some sushi???
I love caterpillar, california, and spider rolls. Though I've tried a couple other speciality rolls here that did knock my socks off.
Hm...I'm hungry.

Oh, when I'm rolling, unless I'm attempting ISO rolls, I don't even bother with the plastic wrap.
I place the nori straight onto a wooden chopping board, add the rice and filling and roll by hand from that.
I guess my years of hand rolling cigarettes (before I quit last year) came in useful afterall.

Really? I'm thinking that may be a personal preference thing...I cover mine with plastic wrap, but my rolls turn to shyte if I don't have one....*ponders this mystery*

After reading all of this I am coming to realize how freaking Frida Kahlo lazy I am.
I just buy mine from the Japanese market down the street.
They love me 'cause I buy so much.
Heh heh...

Not really, Kitsune. It's common knowledge that Westerners have bigger members/fingers than Easterners, so it would only make sense that those little bamboo roling sheets made in the Eastern mentailty would not fit the Western mentality...err, sushi anyone?

Indeed, now pardon while I go collect my mind from the gutter and quit over analyzing the phrase "bamboo rolling sheets." Dragon roll anyone? *snickah*

Well, with the aid of a chargrill pan, I can say...
Beech smoked Tofu, sliced, marinated in Teryaki Marinade then grill chragrilled to get bar markings, and allowed to cool makes for an excellent non meat/fish based Nigiri.
Has a similar texture to a smoked salmon nigiri, just a little more bite than "raw" tofu has because the cooking crisps the outer a little.
Nice smokey taste, and a little crunch. Next time I will cut the tofu a little thicker, so it isn't as likely to break trying to turn it after it sticks a little.

Oooh tofu in sushi? I've never tried that...
I'm not a big fan of tofu, because it is difficult to make tofu taste like anything at all... How long would you marinade it in the Teriyaki for?

It was only in the teryaki for about 20minutes - 1/2 hour.
Also, chargrilling it (for the bar markings), and using Beech smoked Tofu helped I'm sure.
It also helped dry out the curd too, as it can sometimes be a bit moist.
I made a stirfry with the rest of the Tofu block the next day. Again, teryaki marinaded. That worked wonderful too. Also, I added the remains of the marinade to the wok after all the vegatables were in too.

Beech smoked Tofu tastes so much better anyway. I much prefer it to the normal plane unflavoured kind.

Hell yes! My favorites are tamago, Inari, and anago. Oh god, sea eel is the shiz. And I've learned not to use so freaking much wasabi. I used to drown the food's natural flavor with it.

Sushi is the best. It's on my 5 way tie for favorite foods. Sadly since I don't go to my dad's grandmother's house anymore I don't get sushi at thanksgiving anymore. T_T I'd rather have shrimp, sushi, and eggrolls instead of gross turkery, stuffing, and crannberry sauce!
